For hook size, 1/0-2/0 is usually more than enough. Because their mouth can tear easily compared to groupers and snappers, it's better to use a hook/rig that will end up with gut hooking. (assuming you're not intending to release the fish)
For line, it will depend on where you're fishing at. If it's at a place with very little structures like a sandy beach, you can comfortably use a 6lbs mainline with 10lbs leader for chermin. If you're fishing from structured area like rocky breakwaters or jetty where you need to steer fish away from cover, then probably a 12lbs main line and 20-30lbs leader will be a better choice.

If you are fishing close to breakwaters suffering lots of snagging, you can try using those very light weight split shots that sinks very slow or get drifted by the current. Size 1 can still give you quite high snagging rate depending where you cast. The split shot is simply clamped at a short distance from the hook, you may have problem casting it very far.
