The Injury

Recent projects and etc requires carrying of heavy stuffs. As a result, my wrist got injured. The injury was further aggrivated by squid jigging. So my girlfriend suggested that I seek treatment from my TCM Doctor, so here's my hand poked by my most trusted medical professor from Shanghai.

The Recipe Dump

3 June 2009
Everyone tells me that Cuttlefish a.k.a Bak Dao is very rubbery expecially when overcooked.

Last week I specially went for only Cuttlefish to prove that everyone is wrong.

Upon getting 3 medium sized Cuttlefish, I carefully cut them open to investigate. As such, I found out that the outer skin of the Cuttlefish is thicker and higher in tensile strength as compared to the Squids.

Thus with my culinary know how, I carefully removed the outer skin and cut the flesh into pieces. It resembles Abalone.

I braised the cuttlefish till I can poke the chopstick through it. Then I tried. It really tasted like Abalone! No kidding. Will be making it soon for my girlfriend to sample.

When you say lift heavy stuff, you don't mean bags and bags of squid do you? ;) Very nice presentation on your setup, and showing it with good results. Yes, if bak dao is cooked the simple and normal way, i.e. steamed or boiled and is overcooked, it tends to be very rubbery. Cuttlefishes are great if properly prepared (as in your case) but I believe you took a lot of time braising it ya. I am pretty sure it was well worth it too, you must show us the dish and how it is made step by step. And by that I mean a video.
