Sharing something interesting this time ...
If you are hunting for game meat, I have found the place.
Head to Uncle William's Farm at Farmart.
He has ready stock of venison, crocs, quail, free range chicken, goose etc etc ...

Here's my game meat Jerky ~ ;)

Image

Image

Image

Meat source from New Zealand.
Don't think is free rage deer ... likely to be farm breed.
But the cut are really lean with very little fats.
Uncle William selling at $35 per Kilo.

Image

Crunchy Venison Jerky after just 6 hours in the dehydrator.
The flavor is intense and the meat is crisp and crunchy.
Might just try some marinated meat for human soon ... soon ! :p

Image

Image

Image

Venison Shoulder ... same price at $35 per kilo.
Meat comes in bigger slap makes cutting so much easier.
You can cut it into slices, stripes of big pieces all to your choice.

Making Venison Wraps ... pr-dehydrate apples, pumpkin and sweet potatoes.
Use a fruit slicer if you have else you can simply use the skin peeler and you get a bunch of paper thin slices.
Quick and easy.
Set them up into the dehydrator 2 hours before hand as fruits takes longer time to dehydrate compared to meat.

Image

The clue in making Sweet Potatoes Fries ... you need to steamed the sweet potatoes first.
Even though you have "friends" but they are selling it themselves ...
They will never disclose to you how to do it else who is gonna buy from them ?

So after some tiral and error ... I found the answer.
Steaming it and I am on my way to some crunchy sweet potatoes sticks good for human and dogs. :D

The rest of loose meat are used to make into wraps ...

Another game meat ... Crocs Meat !

Image

Image

Image

Uncle William selling it at $35 a kilo ...
Several cut of the animal to choose from ...
I go for the tail portion thinking it is the leanest but it is not.
There is even those with the whole leg with skin and claws intact.

Bought these to make tonic soup ... good for treating asthma.
Rest will be dehydrated into jerky for the furry boys Scott & Junior.

Image

Image

I dehydrate meat for 4-6 hours depending on the thickness of the cut ...
Very thin slices takes 4 hours at 60C, thick one cut into 1/4 of an inch will dehydrate for 6 hours at 60C.

Image

Image

Crocodile Jerky ... anyone game to try ?

Beef Tripe !

Finally found out our local wet market beef stall sells very cheap and nice beef cut and tripe.
Tripe not always available in supermarket.
Even have are not in such big pieces ...
Guess the price for 1.3KG of beef tripe from the wet market ?
$8 !!! Yes $8 for that much of beef tripe.

I know what you are thinking ... this aunty so silly right ...
Bo bainz ... I am not a kitchen person and I don't like to cook ! :p

Am visiting the wet market to do marketing for my two precious darling ! :sweatdrop:
And I kena chopped carrot !
Story later ... let's carry on dehydrating beef tripe ~

Image

The left pcs of tripe is being cleaned while the other is yet to be cleaned.
Look closely you can see layer of fats hidden under the inner lining of the cow's stomach.

Image

A cleaned tripe should look something like the pic above while one that need further processing before it can be dehydrated look like the pic below.
We do not have green tripe in Singapore. Most tripe available are frozen ones which has been clean already.
All we have to do is remove excess fats and wash it and it is good to be cook or dehydrated.

Image

Image

Image

Image

Tripe is an internal organ, the stomach of a cow, which is also a heaven for parasites and bacteria to live.
I pour hot boiling water over clean beef trip to remove any trace of any remaining parasites and/or bacteria.
Just like how we pre treat pig's stomach before cooking it.

Image

Image

Finally ... use a kitchen towel to dry the tripe and it is ready to be cut into stripe for dehydrating.
You may want to cut them into bigger pieces if it's for larger dog.
Word of caution ... beef tripe after dehydrating is pretty hard so try to avoid pointed edges especially if it is meant for small toy breed.

I always use a soft mesh to line every tray for easy washing of tray later ...
The soft mesh prevent the meat from sticking onto the tray while dehydrating thus makes washing so much easier after use.

I will use another empty tray with a solid mesh placed at the bottom of the dehydrator for 1-2 hours.
The solid mesh will collect whatever remaining water or juice.
The base unit houses the motor and fan and it cannot be dismantled for washing so keeping water source away from there is important.

Image

Image

Image

For meat, I will leave it in the dehydrator at 60C for 4-6 hours depending on thickness of cut.
As I do not keep the meat for very long, at most 2 weeks max ...
I do not want to over dry the meat thus looses much of its nutrients.

Crunchy Beef Tripe ... all the above for $8 !
Can you see the broad smile on my face ? :D

Here's the tio tok chai tao story ...

Guess how much I paid for the above Silver Fish ?

You won't believe it ... $20 for 800g !

The fishmonger uncle must have see two chai tao coming his way ...
He was the only stall selling these and without asking the price ...
I have him packed for me.
Felt pai seh to reject so just pay lor !

Won't ever return and buy anything from him ..
I also bought a pcs of batang fish from him and that also cost me $20 !
Wonder if this is the way to do long term biz ... hianz

Image

Image

Image

Silver Fish need very little preparation for dehydrating ...
All you need to do is wash and drained out excess water.
You may choose to marinate it a little with sesame oil or olive oil ...
I prefer to have it as it is ... nothing else but Silver Fish.

Image

Image

Image

spread evenly onto the trays set at 60C dehydrated together with the meat ...
6 hours and you get two trays of crispy silver fish.
Very crispy !

The fishmonger charge me $20 for the above pcs of batang !
Hianz ... like Peace said ... I could have bought a decent pcs of cod fish with the money !

Anyway ... buy liao just forget it lor ... next time I know what price to pay at wet market liaoz !

Wash the fish whole and dry it.
Remove the center bones and sliced it into 4 separate parts.
Sliced the fish to about 2/8 of an inch ... and lay them onto the dehydrating tray.

As I cut the meat into slightly thicker pieces ... it had to leave it in the dehydrator for 8 hours.
The dehydrated batang was golden brown and very crispy.
I couldn't resist the temptation and ate one pcs ...
It tasted just like any fried batang minus the oil and salt.
Extremely healthy food both for human and dogs ~

Continue my adventure into our local wet market ...
Bought these beef cut from the same stall I bought the beef tripe from.
1kg of beef for $10 ... my jaw almost dropped to the floor !
Now wet market is getting more welcoming for me to visit often ... lol !

Most of the local wet market beef from frozen cut.
So I am not expecting the same meat quality from chilled beef.
For that much of meat at this kinda low prices ... I can't complain further.

Image

Image

It's up to your creativity to turn raw meat into interesting jerky ...
I chopped up some carrot slices to really fine and add it to the meat.
The orange colour compliments the red meat very well.
It's pretty easy for the carrot bits to stick onto the raw meat ... just dap the carrot onto the meat with your finger.
The dehydrated meat came out a dark chocolate with a speckle of orange.
You can try adding parsley too ... that will be green ~

Image

Image

Image

Image

Made some big chunky bites to satisfy their chewing desire ...
As these cut contains a little more fats than those chilled meat from supermarket ...
You can spot some oil stain on the dehydrated jerky.
Use kitchen towel to remove any trace of oil and the jerky are good to be packed and stored away for use later.
As I use up the meat pretty fast, max within 2weeks ...
I zip-locked the jerky and stored it in an air-tight treat container for easy access daily.
Rest of jerky are stored in individual air tight container keep away from direct sunlight.
You can store the jerky in the fridge and it can be kept for 1-2 years if dehydrated properly.
Always check for any signs of mold before eating any self dehydrated food.
Just in case ... and yes I am one of those kiasi Singaporeans :p

More wraps in the making ...
I am not joking ... those wraps I made earlier on .. all gone !
Yes that is how fast they are chomping up the teats.

It is not difficult to make meat wraps but it is very time consuming.
Cutting the meat into thin stripes and pre dehydrate fruits for wrapping.
It can take a good 2-3 hour when I started to make these wraps.
Now .. a semi-pro ... an hour is all it takes for wraps and 2-3 hours to fill 8 trays with meat and fish.

It's all worth the effort coz at the end of the day ...
The pooches get to eat healthier food and less skin allergy problems.

And I am still enjoying my glass of dehydrated lemon with manuka honey.
Drinking less coffee and tea these days ~ :yay:

Image

There are many ways to make wraps ...
You can use anything from carrot to sweet potatoes, banana, apples, cauliflower and even green pepper.
Wrap it round their favourite meat and they won't care what type of fruits or veggies is wrap with it.
They will just chomp it down and begs for more ~

Image

Image

Image

Image

Look at what I get from the $10 of raw beef ...
3 different types of meat jerky !

I am smiling ... the dogs are wagging their tails and Simon is also smiling from ear to ear ~ :D
