The 'Ang Kuey' aka Crimson Snapper caught Offshore on Ah Fong's boat.
Firstly chop up all ingredients ....
1. 2 Chillies
2. 5 Garlic
3. 1 (2 inch) Ginger
4. 2 sprig Spring Onion
5. 1 sprig Chinese Celery
Then steam the fish for 7 minutes (depending on fish size).
While steaming fish, prepare another wok for cooking the sauce.
1. Put 4 table spoon Oil
2. Brown chopped ginger
3. Add chopped garlic
4. Add 1 table spoon Oyster Sauce
5. Add 2 table spoon Light Sauce
6. Add chopped Chillies
7. Fry till fragrant
8. Add Spring Onion & Chinese Celery
9. And add 3 table spoon of Water
When fish is done steaming (by 7 minutes), pour sauce on fish.
Remember to let it all steam for another 3 minutes or so. And lastly, fold in the cooked sauce together with the juice of the steamed fish.
And The Spicy Steamed Snapper is ready for the dining table.

Suspend the fish over 2 chopsticks and steam. Reason is that if you steam the fish flat on one side, the side in contact with the plate is usually overcooked as it is hotter. A fish of this size if steaming at home should be about 5mins. Any longer the meat will turn hard. You can try it ... You'll feel that the meat melts in your mouth ...
