Why are these fish golden in the morning but silverish black at night?

It's a mixture of lighting when taking the picture and different environment they're caught from. The first one is caught from a more sandy spot while the latter is from a more muddy environment.

So they change color depending on their habitat peace?

Yes, many fishes can do this with varying degree.

Yes, they are commonly found in rivers and coastal areas, so can tolerate fresh and saltwater.

Can I put a golden flathead goby in a freshwater aquarium

I'm not sure but I bet it can. I used to see them in parts of freshwater streams where the spring tides would reach.
